Wine, whiskey, and liqueurs might taste worlds apart, but they’re all built on one of three core alcohol production methods: fermentation, distillation, or compounding. Each process comes with its own history, chemistry, and impact on flavor and strength. Understanding how alcohol is actually made — from raw ingredient to finished bottle — turns every glass into a small lesson in craftsmanship, and makes choosing your next drink even more enjoyable.
Method 1: Fermented Alcohol

Fermented alcohol is made by adding yeast to raw ingredients like grains or fruit, triggering alcoholic fermentation.
The process works like this: the raw ingredient contains sugar, yeast is added, fermentation occurs, and the sugar is converted into alcohol.
But once that sugar is fully converted, the microorganisms producing the alcohol stop working — which puts a natural ceiling on how high the alcohol content can climb. That’s why fermented drinks like wine and beer tend to have a lower ABV. In fact, the highest alcohol content achievable through fermentation alone tops out at around 20%.
That said, fermentation has one major advantage: it preserves the natural umami and flavor of the ingredients. Producers stop fermentation at just the right moment to capture the flavor profile they’re after.
Single vs. Multiple Fermentation
Fermented alcohol falls into two broad categories: single fermentation and multiple fermentation. Multiple fermentation is further divided into multiple sequential fermentation and multiple parallel fermentation.
Single Fermentation
When yeast is added to an ingredient already rich in sugar (typically fruit), the yeast breaks that sugar down directly into alcohol. This is how wine is made.
Multiple Fermentation — Sequential
Starch is first converted into sugar (saccharification), and fermentation happens afterward, as a separate step. Beer is the classic example of this method.
Multiple Fermentation — Parallel
Saccharification and alcoholic fermentation happen at the same time, in the same vessel. This is the method used to make sake — a process known as multiple parallel fermentation, and one that’s genuinely unique to sake among the world’s fermented beverages.
Method 2: Distilled Spirits

Distilled spirits are made by fermenting fruit or grains, then vaporizing that liquid in a still and condensing it back into liquid form.
Distillation strips away much of the original ingredient’s harsh edges and strong flavor, resulting in a smoother spirit — one that’s also easier to blend with other ingredients.
Here’s the science behind it: when a fermented liquid is heated in a still, the ethanol evaporates before the water does (since ethanol has a lower boiling point than water). By condensing and cooling that vapor back into liquid form, you end up with a spirit that has a much higher alcohol content.
Today, distillation happens through one of two methods: pot still (single) distillation or continuous distillation. Because continuous distillation involves repeated rounds of distilling, much of the spirit’s original character and flavor gets stripped away in the process — which is why producers often add water back in, or introduce flavor through barrel aging, to compensate.
The history of distillation is remarkably old — some accounts trace early distillation practices back as far as the 4th or 5th century BC in ancient Greece, though the exact origins remain debated among historians. In Japan, the oldest distilled spirit is Awamori, a rice-based spirit from Okinawa with roots stretching back roughly 600 years.
Method 3: Compound (or Infused) Spirits

Compound spirits — better known as liqueurs — are made by infusing high-proof distilled spirits with fruit, herbs, spices, sweeteners, or medicinal botanicals, then adding sugar.
Liqueurs trace back to ancient Greece, where herbs were dissolved into wine as early medicinal blends. Once distilled spirits arrived, liqueurs truly began to flourish. European monasteries advanced them further — infusing concentrated spirits with herbs both extended shelf life and boosted medicinal value. As the Age of Exploration opened up global trade in fruits, spices, and herbs, liqueurs diversified even more, eventually becoming a staple of aristocratic life in medieval Europe.
Today, liqueurs span everything from fruit-based to herb- and spice-based varieties. In Japan, two of the oldest are mirin and umeshu (plum liqueur). Mirin began as a sweet rice-based liqueur enjoyed since the Sengoku era, though it’s now classified purely as a cooking seasoning. Other Japanese liqueurs include yuzu, mandarin orange, matcha, and cherry blossom.
Generally, compound spirits made from a fermented base fall under mirin-type, while those made from a distilled base are simply called liqueur.
