Recipe & How to Make
Ingredients

Recipe no.044
- Sake — 1 oz (30ml)
- Kirsch — 1/3 oz (10ml)
- White curaçao — 1/2 oz (15ml)
- Lemon juice — 1/3 oz (10ml)
- Tonic water — Full
- Blue curaçao — 2 tsp
- 1 tsp is roughly equal to one bar spoon.
- “Full” means filling the glass to about 80–90% capacity.
Directions

Add the sake, kirsch, white curaçao, lemon juice, and ice to a shaker.
Shake well, then pour the shaken mixture along with the ice into a glass.
Fill gently with tonic water to avoid excess foaming, then stir slowly and lightly. When mixing in carbonated ingredients, one or two slow rotations while raising and lowering the ice is enough to combine everything.
Hold the back of a bar spoon against the rim of the glass, and slowly pour the blue curaçao down the spoon’s back so it sinks to the bottom of the glass to finish.
- Technique | Shake & Stir & Sink

Origins & History

Photo | Lake Geneva, Switzerland
A sake cocktail reflecting the dreamlike blue of Lake Geneva — a lake straddling Switzerland and France — Fantastic Leman was created in 1981 by bartender Kazuo Ueda, who won silver representing Japan at the IBA World Cocktail Festival in Geneva itself. Here’s what makes that notable: he built a European lake’s color entirely out of Japanese sake, at a competition held on that lake’s own shore.
Sake forms the core, with kirsch and white curaçao layering in fruity aroma, lemon sharpening the outline, and tonic’s bitterness rounding out the finish. The base gets shaken with ice into the glass, topped with tonic, then blue curaçao is poured gently down a spoon’s back to sink and settle — a process that visually recreates the lake’s own gradient.
The name and visual design aren’t separable: blue rising from the glass’s base captures Lake Geneva’s particular stillness and depth. As an internationally awarded sake cocktail, it opened new possibilities for Japanese alcohol on a world stage.
Characteristics & Flavor

Fantastic Leman is one of the more crisp yet visually striking sake cocktails, and I’d argue it earns both descriptions equally. Sake’s clean drinkability stays front and center, with kirsch and white curaçao adding fruitiness and lemon juice tightening the whole build. Tonic’s light bitterness rounds it into a well-balanced sip — sweet and tart in genuine harmony, with a lightness that still carries real substance. The blue curaçao settling at the bottom is the real visual payoff, spreading into a gradient reminiscent of an actual lake.
The first taste brings bright citrus forward, followed by sake’s soft, savory finish lingering behind it, before a faint bitterness closes things out gently. This is a cocktail built to satisfy both the eye and the palate at once — genuinely well-suited to a special evening or a moment worth remembering.
Points, Twists & Best Food Pairings

- Food Pairings — Sashimi or light seafood canapés pair well — sake’s umami echoes the fish, while citrus keeps every bite bright.
- Points — Common mistake: pouring blue curaçao too fast, which mixes it in instantly. Pour slowly over a spoon’s back to let it sink.
- Twists — Swap kirsch for maraschino liqueur for a softer cherry note, or add a fresh mint sprig for extra fragrance.
