The Caribbean Iceberg cocktail turns its name upside down: true to its title, the “iceberg” sinks, as blue curaçao settles to the bottom like deep sea water beneath a glass packed with crushed ice.
Shaken from gold rum, kiwi and lychee liqueurs and pineapple juice, it bursts with bright tropical fruit carried on rum’s mellow, caramel warmth, a gold-prize creation by Japanese bartender Masumi Suzuki at the 1996 Havana Club Cocktail Competition. It’s a slice of island summer well worth pouring tonight.
Recipe and How to Make It
Ingredients

Recipe no.151
- Gold rum — 1 oz (30ml)
- Kiwi liqueur — 1 oz (30ml)
- Lychee liqueur — 1/3 oz (10ml)
- Pineapple juice — 1 + 1/2 oz (45ml)
- Blue curaçao — 1/3 oz (10ml)
- Crushed ice
- Crushed ice = finely broken ice
Directions

Make the crushed ice in advance. Since it melts quickly, add it to the glass later.
Add the gold rum, kiwi liqueur, lychee liqueur, pineapple juice and ice to the shaker.
Shake well. With this many ingredients, it’s fine to shake a little slower, but shake more times than usual.
Pack the glass with crushed ice and pour in the shaken drink. Sink the blue curaçao to the bottom, add a straw, and it’s ready to serve.

About the Caribbean Iceberg
Origin

The Caribbean Iceberg was created by Japanese bartender Masumi Suzuki for the 1996 Havana Club Cocktail Competition, a contest named after the famous Cuban rum brand. It won the gold prize, and its success helped it become a favorite in bars and among cocktail lovers.
“Caribbean” refers to the region around the Caribbean Sea, the homeland of rum, which is why a rum competition fits the name so well. “Iceberg” means a floating mountain of ice, so together the name means “an iceberg in the Caribbean Sea.”
That image is built right into the glass. Blue curaçao sinks to the bottom, while crushed ice fills the glass above it, creating a dreamy scene of ice floating on a tropical sea. It’s a cocktail that delights both the eyes and the palate, like a work of art.
Flavor and Character

The Caribbean Iceberg balances tropical sweetness with striking looks, a drink to enjoy with all five senses. Kiwi and lychee liqueurs bring bright, fragrant fruit, pineapple adds juicy sweet-tart notes, and gold rum gives everything a rich, mellow backbone.
The blue curaçao sinks because it’s heavier with sugar than the rest of the drink, creating the deep-blue base that gives the cocktail its iceberg look.
I’d always pack the glass tightly with crushed ice, because it keeps the drink ice-cold and holds the layers beautifully until the last sip.
Points, Twists & Food Pairings

Tips for Making It
- Pouring the blue curaçao too fast (a common mistake) — Many people pour it in quickly or give the drink a stir. The blue then mixes with the yellow-green kiwi and pineapple and turns the whole glass green. Pour it slowly down a bar spoon or straw so it sinks cleanly to the bottom.
- Use dry, freshly crushed ice — Crushed ice that has started melting adds extra water and dulls the fruit flavors. Crush the ice just before serving and drain any meltwater, so the drink stays vivid, cold and full-flavored.
- Choose a Cuban-style gold rum — A smooth, lightly aged gold rum adds gentle vanilla and caramel that support the fruit liqueurs. I’d use a Cuban-style rum such as Havana Club Añejo Especial, a fitting nod to the competition where this drink was born.
Twists
- Sugar Rim & Orange-Rosemary Garnish — Rim the glass with sugar and garnish with an orange slice and a rosemary sprig. The sweet rim softens each sip, and rosemary’s herbal aroma adds a fresh, elegant contrast to the tropical fruit.
- Frozen Caribbean Iceberg — Blend the rum, liqueurs and pineapple juice with crushed ice until smooth, then pour and sink the blue curaçao. The slushy texture makes it even more refreshing and perfect for hot summer days.
Food Pairings
- Coconut shrimp — The crispy, coconut-coated shrimp echoes the drink’s tropical character, while pineapple’s acidity cuts through the fried coating and keeps each bite light.
- Jerk chicken — Caribbean jerk spices bring warmth and smoky heat, and the drink’s sweet kiwi and lychee cool the palate, a classic sweet-and-spicy island match.
- Tropical fruit platter — Mango, papaya and fresh kiwi mirror the fruit liqueurs, and their natural juiciness makes the drink taste even brighter, like a fruity dessert by the sea.
